This Simple Kale Salad Is My New Favorite
In the spirit of fostering healthier eating habits, I’ve started to experiment with different vegetables I normally would stay far away from, such as kale. To be honest, kale is not my favorite.  But, because I know how good it is for me, I keep trying to figure out ways to incorporate this superfood into my diet. Most of the time, this ends up being though smoothies.
Recently, I tuned in to a podcast episode where a raw vegan explained how vital it is to ‘massage’ your greens before eating them.  I discovered that doing this with a slightly sweet vinaigrette makes kale much more enjoyable.  It tenderizes them while infusing great flavor.
A few weeks ago, I made this simple but oh so tasty kale salad that I literally ate all week long. This recipe was actually an experiment gone well.  I wasn’t sure what to expect but ended up being pleasantly surprised with my results.

You’ll Need:

1 pound of chopped raw kale
Half head of cabbage (shredded)
2 cups of shredded carrots
2 cups of chopped broccoli
Small red onion (sliced)
Salt
Pepper
Garlic powder
Red Wine Italian Vinaigrette

Directions:

Combine all raw vegetables in a bowl and drizzle with salad dressing.  Massage until all vegetables are covered, but not totally saturated (you don’t want mushy salad). Salt, pepper and garlic powder to taste. Mix well.

This lasted me for about two days, then I whipped up another batch the day after it was all gone.

Also, since I really like black olives, I decided to add a few my second go round. However, I actually prefer the salad without them.  It wasn’t terrible, just not as good, IMO.
